Thanksgiving Maple-Pecan Bars, A Vegan Treat for Everyone!

Recipe: Maple-Pecan Bliss Bars

Ingredients:

For the Crust:

  • 1 ½ cups almond flour

  • ½ cup coconut flour

  • ¼ cup coconut oil, melted

  • 2 tbsp maple syrup

  • 1 tsp vanilla extract

For the Filling:

  • ¾ cup full-fat coconut milk

  • ½ cup pure maple syrup

  • ½ cup coconut sugar

  • 2 tbsp arrowroot powder (or cornstarch)

  • 1 tsp vanilla extract

  • 1 cup chopped pecans

  • A pinch of sea salt

For the Whipped Coconut Topping:

  • 1 can coconut cream, refrigerated overnight

  • 1 tbsp maple syrup

  • ½ tsp vanilla extract

Instructions:

  1. Preheat & Prep: Preheat your oven to 350°F (175°C). Grease an 8x8-inch baking dish with coconut oil or line with parchment paper.

  2. Crust: In a mixing bowl, combine almond flour, coconut flour, melted coconut oil, maple syrup, and vanilla extract. Mix until it forms a crumbly dough. Press this crust mixture evenly into the bottom of the baking dish. Bake for 10-12 minutes or until the edges are lightly golden, then set aside to cool.

  3. Filling: In a saucepan over medium heat, combine the coconut milk, maple syrup, coconut sugar, and sea salt. Stir continuously until the mixture starts to thicken, about 5-7 minutes. Remove from heat, add the arrowroot powder, vanilla extract, and pecans, and mix well.

  4. Assemble & Bake: Pour the pecan filling over the baked crust, spreading it evenly. Bake for another 25-30 minutes or until the filling is set and the edges are slightly caramelized. Let it cool completely, then refrigerate for at least 2 hours to allow the filling to set.

  5. Whipped Coconut Topping: Open the can of coconut cream and scoop out the solid cream into a mixing bowl. Add maple syrup and vanilla extract, then whisk until fluffy. Spread or pipe the whipped topping over the chilled bars.

  6. Serve & Enjoy: Slice into bars, garnish with a sprinkle of cinnamon or a few extra chopped pecans if desired, and enjoy a decadent, nourishing treat!
